pumpkin soup with ginger and coconut (breadsticks, pumpkin seeds, and creme fraiche topping)

PUMPKIN SOUP

WITH GINGER AND COCONUT

Cut the pumpkin into small pieces. Sauté the onions in a large pan with the olive oil, cumin seeds, cayenne, garlic, and ginger. Add the pumpkin and sauté for 5 minutes without browning. Pour in the coconut cream and cook for about 30 minutes until everything is tender. If there is not enough liquid in the pan, a splash of water may be added. Blend the soup in a blender until it’s smooth or use an immersion blender in the pan. Strain the soup. If necessary, push the last remaining soup through the sieve with the rounded side of a spoon. Season the soup with salt and pepper.

Serve the soup with a tablespoon of crème fraîche and toasted pumpkin seeds added to each bowl and a sprinkle of cumin seeds. Serve with breadsticks.

  • 6 tbsp. olive oil
  • 2 tbsp. cumin seeds
  • 2 pinches of ground cayenne
  • 2 cloves garlic, crushed
  • 2 ½-in. fresh ginger, peeled and finely chopped
  • 2 cups coconut cream

About the Author

Chef Joris Bijdendijk has cooked together three Michelin stars in eight years. For Bridges in 2014, RIJKS in 2017–of which he is the executive chef–and recently for his restaurant Wils, which opened in 2019. Bijdendijk promotes the cuisine of the Low Countries, characterized by the use of Dutch products. In 2017 his first cookbook Bijdendijk: A Kitchen for the Low Countries, was published, which earned him a nomination for Het Gouden Kookboek 2018. His second cookbook followed in 2021, Bijdendijk at Home.



Samuel Levie is a sausage maker at Brandt & Levie, co-founder of the Food Cabinet campaign agency, and a columnist at
Het Parool, among others. Samuel wrote several cookbooks, including De Worst Story, We Eten Thuis, and Eten Met Miffy.

Beautifully designed cookbook
I read through the whole cookbook today and I was impressed by its beauty. I've never seen such a great designed book, the graphic desig is amazing. It's so beautifully designed with a lot of colors and beautiful pictures! This book is already great "just to have on your shelve" if you understand what I'm saying. For me, the recipes and the ingredients are not what I'm looking for to cook during the week, it's a little bit on the more difficult side to my opinion and compared to what I'm used to. If you want to spend some extra time in the kitchen in the weekend, this book is more suitable (for me!). With none of the recipes I had the feeling of "Yes! This is the one I want to make", but I think that has to do with unknown ingredients or maybe the way how the soup is prepared. There are plenty of various recipes and also a lot of them are vegetarian. I'm looking forward to try out some recipes. They all look delicious! I recommend the cookbook for sure ♡ thanks to the authors for this beautiful book.

    Unique and simple recipes! Sometimes soup can feel "basic" which is both beautiful and boring. These recipes bring new (to me) and exciting variations on soup, without feeling overwhelmed by *too* exotic of ingredients or way over my head in kitchen skills (I live ruraly so it can be challenging to source items)
    I gave this as a gift to my MIL *also difficult* and it was a hit with her!

    I wanted a book on every day hearty and healthy soups like my mom used to make. This book was not that type of book. A few examples were: Cuddlefish stew with squid ink. Several soups calling for "However much you can spend on truffles" Recipes were from different areas of the world. I'm sure there are people out there that would like to try these type of soups and stews. I returned the book since I would never use those types of recipes. Beautiful colorful pictures.

    "Good Soup" is such an adorable cookbook! It's packed with tons of fantastic soup recipes, and the art and style make it even more enjoyable to use. I find myself reaching for this cookbook all the time – it's become a staple in my kitchen! No matter what mood you're in, you'll definitely discover a soup that fits the bill.

    I can't help but rave about the Carrot and Coriander soup in there – it's a household favorite that's found its way into my mom's regular recipes. It's just the thing for those days when you're craving something cozy and delicious. "Good Soup" is the kind of cookbook that turns cooking into a fun and easy adventure, and it's a must-see if you're into unique soup recipes and beautiful visuals! 🍲📚😋
