"Aims to prove that soup can be served year-round with recipes for broths, bisques, chowders, and more." —Publishers Weekly

"The combinations of ingredients will delight adventurous cooks" —San Francisco Book Review
Before Chef Joris Bijdendijk cooked together three Michelin stars and Samuel Levie became a prolific sausage maker, soup was a regular guest in many memories. Good Soup pays tribute to the phenomenon that is soup in 52 recipes from all over the world.
Whether your soup is a meal in itself or a light starter, it is always comforting. For chefs Joris Bijdendijk and Samuel Levie, soup is the regular guest in many memories: a comforting bowl of broth when they were ill, steaming cups or cold gazpacho when there was something to celebrate, or a hot mug of soup after skating. Or that first time they made their own fish stock as young chefs…
An ode to soup in all its forms, this vibrant cookbook features weekly recipes for comfort all year round, including thai coconut soup, mushroom cream soup, gazpacho, and goulash. Not a week can go by without a delicious bowl.
In recent years, their shared love of soup has taken on outrageous proportions. In addition to this colorful soup book, they were involved in a huge Freedom Meal, consisting of ten thousand servings of pumpkin soup, and launched their own tinned soup, SNERT, and three other canned soups.

PUMPKIN SOUP
WITH GINGER AND COCONUT
Cut the pumpkin into small pieces. Sauté the onions in a large pan with the olive oil, cumin seeds, cayenne, garlic, and ginger. Add the pumpkin and sauté for 5 minutes without browning. Pour in the coconut cream and cook for about 30 minutes until everything is tender. If there is not enough liquid in the pan, a splash of water may be added. Blend the soup in a blender until it’s smooth or use an immersion blender in the pan. Strain the soup. If necessary, push the last remaining soup through the sieve with the rounded side of a spoon. Season the soup with salt and pepper.
Serve the soup with a tablespoon of crème fraîche and toasted pumpkin seeds added to each bowl and a sprinkle of cumin seeds. Serve with breadsticks.
- 2 ¼ pounds pumpkin, peeled, seeded, and fibers removed
- 2 onions, grated
- 6 tbsp. olive oil
- 2 tbsp. cumin seeds
- 2 pinches of ground cayenne
- 2 cloves garlic, crushed
- 2 ½-in. fresh ginger, peeled and finely chopped
- 2 cups coconut cream
Editorial Reviews
Review
"Michelin-starred chef Bijdendijk and sausage maker Levie love soup so much they launched their own canned soup business SNERT, named after the traditional Dutch split-pea soup. Focusing solely on soup, each recipe in this colorful cookbook is a meal of its own, meant to feed four to six people. The introduction describes categories of soups, plus shares notes on flavorings. There is a separate section on making soup stock to use as a base in many of the recipes. The soups themselves are organized by color, and the 52 recipes ensure a tasty soup option for every week of the year. The recipes come from a range of cultures around the world, including an Indian daal, a North Sea fish soup, an ajo blanco from the Mediterranean, and even a traditional borscht. The index by soup type will help readers find something that fits their tastes, and the variety of recipes gives options for different dietary needs. VERDICT The recipes are not overly complicated, offering wide appeal and making the book accessible for less-experienced cooks." -- Dawn Lowe-Wincentsen ― Library Journal
“Aims to prove that soup can be served year-round with recipes for broths, bisques, chowders, and more.” ― Publishers Weekly
“Being in the soup never felt so good. The recipes in this book are fun to make and very tasty.” ― delicious

- Reviewed in the United States on March 1, 2025I read through the whole cookbook today and I was impressed by its beauty. I've never seen such a great designed book, the graphic desig is amazing. It's so beautifully designed with a lot of colors and beautiful pictures! This book is already great "just to have on your shelve" if you understand what I'm saying.
For me, the recipes and the ingredients are not what I'm looking for to cook during the week, it's a little bit on the more difficult side to my opinion and compared to what I'm used to. If you want to spend some extra time in the kitchen in the weekend, this book is more suitable (for me!). With none of the recipes I had the feeling of "Yes! This is the one I want to make", but I think that has to do with unknown ingredients or maybe the way how the soup is prepared.
There are plenty of various recipes and also a lot of them are vegetarian. I'm looking forward to try out some recipes. They all look delicious!
I recommend the cookbook for sure ♡ thanks to the authors for this beautiful book.

- Reviewed in the United States on February 23, 2025Unique and simple recipes! Sometimes soup can feel "basic" which is both beautiful and boring. These recipes bring new (to me) and exciting variations on soup, without feeling overwhelmed by *too* exotic of ingredients or way over my head in kitchen skills (I live ruraly so it can be challenging to source items)
I gave this as a gift to my MIL *also difficult* and it was a hit with her!
- Reviewed in the United States on January 25, 2025Lots of great recipes. Cute cookbook snd very giftable for the soup lover. Nice addition to my collection.
- Reviewed in the United States on March 24, 2024I wanted a book on every day hearty and healthy soups like my mom used to make. This book was not that type of book. A few examples were: Cuddlefish stew with squid ink. Several soups calling for "However much you can spend on truffles" Recipes were from different areas of the world. I'm sure there are people out there that would like to try these type of soups and stews. I returned the book since I would never use those types of recipes. Beautiful colorful pictures.
- Reviewed in the United States on September 24, 2024I saw this book in the store before I bought it. It is awesome! I love trying new soup recipes and this one is the best one i have found.
- Reviewed in the United States on November 3, 2023"Good Soup" is such an adorable cookbook! It's packed with tons of fantastic soup recipes, and the art and style make it even more enjoyable to use. I find myself reaching for this cookbook all the time – it's become a staple in my kitchen! No matter what mood you're in, you'll definitely discover a soup that fits the bill.
I can't help but rave about the Carrot and Coriander soup in there – it's a household favorite that's found its way into my mom's regular recipes. It's just the thing for those days when you're craving something cozy and delicious. "Good Soup" is the kind of cookbook that turns cooking into a fun and easy adventure, and it's a must-see if you're into unique soup recipes and beautiful visuals! 🍲📚😋
