- Backcountry Iron’s new 10.25 inch smooth cast iron heirloom takes inspiration from the classic hand-me-downs of old like the legendary polished cast iron pans made by Wagner and Griswold. Wasatch skillets seek to recapture the former glory of vintage cast iron in the modern day. The machined cooking surface and sides paired with a timeless design create a unique skillet that will leave you speechless. This skillet has a 10.25 inch diameter, measures 11.00 inches spout to spout, and has a 4.75 inch handle.
- Smooth cast iron provides a more uniform cooking surface that holds an excellent seasoning. Easy release properties keep food from sticking, and creates a better sear with exceptional browning – similar to enameled cast iron. This skillet is great for single or two person dishes, pies and cakes, and can even fit a whole chicken!
- Our Wasatch cast iron skillets have a glossy cooking surface that can be used with electric, induction or gas stovetops. Toss it in the oven, and even place it on campfires like an outdoorsman. It will retain heat longer and more evenly than other cast iron skillets.
- Wasatch pans are quadruple seasoned with vegetable and grape seed oil, giving it that signature bronze coloring. Cast iron can rust so keep it out of the dishwasher, do not soak overnight, or air dry. Use warm water and scrape off any stuck food with a flat utensil. You can also lightly polish the cooking surface with a stainless steel chainmail scrubber for a smooth patina. Wipe dry immediately after cleaning, and apply a new layer of oil to protect from rust.

From the pictures, it appeared like the Wasatch skillets might be comparable to other high end modern cast iron skillets, but after receiving it, it clearly is not in the same class. First of all, it is made in China which is not known for quality cast iron. It appears that this Wasatch 6" skillet is a mediocre casting that has been machined smooth on the interior. One thing that really jumps out at you is that this skillet is a full pound heavier than all of my vintage 6" cast iron skillets. It is almost a pound heavier than my two Lodge 6" skillets and my very high quality 6" skillet from Field. Absolutely ridiculous. Wasatch probably claims this is for better heat retention, but there is such a thing as too much of a good thing. This 6" skillet is insanely heavy! They could have reduced the weight by getting rid of the helper handle which is totally unnecessary on a skillet this small. The primary handle is bulky and could also have been reduced in thickness and size. You have to wonder if the Wasatch foundry is simply incapable of casting skillets with thin walls.
The casting is very rough. And there is minor pitting on the inside walls of the skillet, indicative of poor quality control during the casting and milling processes. The interior machining is also mediocre. The center 1.25" of the cooking surface has a depression below the rest of the interior which causes pooling of cooking fats. The interior machining does not extend all the way up the side walls of the skillet. Lazy. Another disappointment is that the skillet is not terribly deep. The skillet does not sit particularly flat, either. All these complaints and yet we haven't even heated it up yet. But there's more.
Wasatch says their skillets have a deep heat ring. Deep yes, heat ring no. What they call a heat ring is a groove in the base of the skillet whereas real heat rings stick out from the bottom surface to keep the pan raised above the heat source. A raised heat ring also helps skillets to sit flat. This "heat ring" on the Wasatch pan does absolutely nothing.
The handle is awkward. Normal cast iron skillet handles are narrow near the skillet and wider where you hold the handle. The Wasatch handle tapers from very wide at the skillet body to very narrow at the end. This makes it easy to lose your grip on the handle as it can slip out of your hand.
And one last thing about the skillet is that the pour spouts are tiny and you need to exercise care if you don't want the liquid to flow out over the side of the pan.
We haven't experienced this ourselves, but we have seen in other reviews that the factory seasoning comes off when cooking meat. You may need to strip the skillet and reseason with proper technique.
So bottom line is this skillet gets 1 star since you can't give 0. I would never recommend this skillet to anyone. At $80, it is insanely overpriced considering the problems with it. You can buy an ordinary Lodge 6.5" skillet for $12. Even their high-end Blacklock skillet is only $40. I never thought I would recommend Lodge over a smooth cast iron skillet, but in the case of Wasatch, I will.
