I used the vehicle cookie cutter/presses to make lemon shortbread cookies for a 2 yr old's birthday party and a boy baby shower. They were super cute and delicious. The box has a recipe "Cookie Formula" on the back, but it is missing specifics for any liquid binder and amounts of flavoring. My modified recipe is:
1 egg yolk
85 grams of super fine sugar
1/8 tsp salt
120 grams butter
2 Tbsps Lemon Juice powder (from King Arthur Baking)
2 tsp lemon zest
Mix above ingredients together, then add:
230 grams all purpose flour
1 Tbsp water
1 Tbsp vodka (to add moisture & keep cookies tender, per America's Test Kitchen)
Combine just until dough sticks together, then roll dough to 1/4 inch thickness.
Cut and press the cookies. Transfer to parchment on a baking sheet.
Bake at 350 degrees for about 11 minutes, until bottoms and edges start to brown.
Cool completely.
I also dipped the cookie bottoms in a lemon glaze to add more flavor without covering any of the cookies' top pressed images.
Glaze: 1/2 cup powdered sugar + 1 Tbsp Lemon Juice Powder + enough lemon juice to get glaze consistency for dipping.
