About the Author
RUKMINI IYER is the bestselling author of the Roasting Tin series, selling over 1.75 million copies worldwide. It’s massively changed what I eat at home (more variety, more vegetables, better flavours), and also given me better packed lunches for work - I make one of the recipes and it lasts me 3 lunches.
Good variety of veg, fish and meat dishes. I love it even though I hardly use the meat recipes - there’s still loads of other options.
I bought a nice quality tray and it’s worked great for the recipes. She gives advice about which sort of treat to use but she’s very flexible and relaxed - good advice. Great mix of flavours. It sometimes takes more than 10 mins to prep, but generally v quick, easy and straightforward. It means we have special meals in a short time with very little faff.
My favourite of all my cook books!
I’ve bought 3 of her other tray books, too, but this remains my most used. Partly due to the quickness and also good variety.

I have never been a keen cook, it's been purely a matter of trying to feed my poor husband reasonably nutritious food but spending the bare minimum of time cooking. My desire not to spend more time than necessary on cooking hasn't changed, but the quality and healthiness of our food and the enjoyment of eating it has - beyond my wildest dreams! The recipes are all straightforward and easy, with a mingling of really interesting and delicious flavours, far less carbs than we were wont to be eating, plus the ingredients are all in one tin, into the oven, then done in 30 minutes max, what could be better. I can't believe that it's taken all these years to find such a book - thank you so much, Rukmini! My favourites (so far) are the Quick Chicken, Leek & Chorizo Pie, the Rosemary & Garlic Roasted Lamb with Artichokes and Olives, with the Chilli Beef with Red Peppers, Sweetcorn and Spring Onions a close second. But love them all, including the vegetarian options! Worth its weight in gold!! And the great thing is you could probably cook dinner for friends and amaze them with the transformation of your cooking!

This book is heavy on usable recipes that demand to be made. The simple premise of everything in a pan and throw it in the oven is perfect for busy families. Some of the options take as little as 5 minutes prep followed by 30 minutes in the oven.
There's lots of options here, but our favourites in a household of veggies are; Baked gnocci (crispy and chewy) and many of the pulses recipes. Flavours on most of the recipes we've tried are punchy but not overpowering. Clean up is minimal too, with only one pan to go at.
Since getting this book, we've now got all 3 tin books. Some great variations but the same principles. Super recommended, and super lazy. If I had to buy just one it would

There is only about 4 or 5 recipes I would make. I am a bit disappointed. The pistachio and raspberry cake is really good. The salmon one on the cover that also sounds good, havent made it yet. Positives are the book is set out well and recipies are easy to understand.

Working through from the beginning of the book, every dish has turned out to be delicious. The recipes are easy to adapt to particular ingredients available, or to convert to vegetarian. A very fine cook book!
