*Makes about 4 1/2 dozen*
This crumbly shortbread is studded with dried currants, which are tiny
raisins made from Zante grapes. The currants must be soaked overnight,
so you'll need to plan your craving a day in advance.
* 1/2 cup dark rum
* 1 cup currants
* 1 cup (2 sticks) unsalted butter, room temperature
* 3/4 cup confectioners' sugar
* 1/2 teaspoon finely grated orange zest
* 1 teaspoon pure vanilla extract
* 1 1/2 cups all-purpose flour
* 3/4 cup finely shredded unsweetened coconut
* 1 teaspoon coarse salt
1. Combine rum and currants in an airtight container; let sit at room
temperature overnight. Drain; reserving 2 tablespoons rum.
2. Put butter, confectioners' sugar, and zest in the bowl of an electric
mixer fitted with the paddle attachment. Beat until creamy and smooth,
about 2 minutes. Add vanilla and reserved rum. Beat well, scraping down
the sides of the bowl as necessary. Reduce speed to low. Add flour,
coconut, and salt, and beat for 3 minutes. Stir in currants by hand.
Divide dough in half and form each into a log about 1/2 inches in
diameter; wrap in parchment, and refrigerate 1 hour (or up to 3 days).
3. Preheat oven to 325°F. Remove dough from parchment; slice into
1/4-inch-thick rounds. Place on parchment paper-lined baking sheets,
spacing about 1 inch apart. Bake until pale golden, about 20 minutes,
rotating sheets halfway through. Transfer to wire racks to cool
completely. Cookies can be stored in airtight containers at room
temperature up to 1 week.

- Reviewed in the United States on December 3, 2008I have bought 4 copies of this book to give to friends because I love it. It is the perfect gift for anyone who likes to bake. I have been baking one new cookie every week with my son and daughter since we got this book in the summer.
What I love is that there are all types of recipes, simple ones and more complex, with a wide variety of flavors. The book is divided by cookie categories: Light and Delicate, Soft and Chewy, Crumbly and Sandy, Chunky and Nutty, Cakey and Tender, Crisp and Crunchy and Rich and Dense. Each category is accompanied with beautiful photos of the cookies, which are all shown in the table of contents. The book has beautiful layout (as always for martha books) and easy to follow recipes.
Enjoy!
- Reviewed in the United States on January 22, 2013I am not a huge fan of Martha Stewart but when I wanted a cookbook on cookies, I purchased this based on the many positive recipes. I was prepared to just like the book but I love it. I love how the recipes are organized as light and delicate, soft and chewy, crispy and crunchy etc. The list of recipes in the first few pages is really neat, including not just the name of the cookie and page number but also a small photograph of the cookie. There are enough recipes, about 175 of them, to suit every taste with beautiful photographs that entice you to try them.
This book was put to good use over the holidays when I purchased it. I have tried well over 25 recipes since I purchased the book last month even modifying some of them. Turned out great each time.
Nice tips at the end with a very typical Martha type write up on how to package cookie as gifts. Very neat!
- Reviewed in the United States on January 19, 2024This is my favorite cookie recipe book of all time. I LOVE the index separating the cookies into texture. Knowing what texture you’re going to get from a cookie is exactly the kind of detail I’m looking for when I’m baking. It’s fun and very pretty. Great gift
- Reviewed in the United States on May 6, 2017This has some exotic recipes for making treats. Have tried one so far and only got an ok for that experiment. Need to "leave the raisins out" was the advice. I will write this on that page. Also, was looking for some of the recipes from Martha Stewart's Magazine but did not find those. :-( A molasses cookie with oatmeal.
Adding to this review in 2024 there are some yummy cookie recipes in this book. It is a paper cover book and mine is coming apart. This is the best of Martha Stewart's cookie books. Chocolate ginger bread and white chocolate with gold raisins are both yummy make double batches. Now I am getting asked to make the cookies with all the fruit and nuts in them or anything with gold raisins. Who knew back in "You purchased this edition on April 1, 2017. "
- Reviewed in the United States on November 25, 2022Recipes range from easy to more challenging and there is a good variety. Cookies are mainly grouped by texture (chewy, crispy etc.). The instructions are easy to follow. If you like to bake cookies this is a good book to add to your collection.
- Reviewed in the United States on December 24, 2008I checked this book out at my local library and made a few cookies before ordering it. (I have too many cookbooks as it is). The recipes and photos are divine! The only complaint I have about this book is that I wish the publisher had included measurements by weight. Most home cooks use volume to measure out ingredients, but those of us who use weight have a hard and tedious time going back to volume. That being said, I want to tell you that the most delicious Palmiers and Chocolate Crackle cookies I have ever eaten, came out of this book. During Christmas I bake LOTS of cookies to give away, and this year I received many compliments on the cookies from this book. So next year I will use some of the same recipes plus a few new ones. Besides the great photos and recipes, the Table of Contents is a pictorial of the 175 cookie recipes. All the cookies are right there, in front of you to choose from without having to peruse the entire book to choose what you are going to bake. This to me is a great time saver. The cookies are divided into the following sections:
Light and Delicate
Soft and Chewy
Crumbly and Sandy
Chunky and Nutty
Cakey and Tender
Crisp and Crunchy
Rich and Dense
Tools and Techniques
Packaging and Giving
Sources
This is a great book to own, but be careful.....those cookies have a way of jumping out of the page, make you bake them, and then insist on following you everywhere by sitting on your hips, thighs, belly, etc. If you are not a cookie monster now, you will be one if you have this book.
- Reviewed in the United States on September 18, 2012I bought this book because i've already bought the Martha Stewart's Cupcakes book.
I've been baking cookies for years and i really enjoy doing it :).
I own several cookie books but this one is really one of the finest. I've tested many recipes and despite the fact that i'm not from the usa, and i'm used to have my recipes in grams, if you have a set of measuring cups and spoons, you can do them just as well. There are a few recipes that have some ingredients that i can't find here in my country, but other than that...the recipes definetely work!
It has all the recipes grouped in sections, so you know what kind of cookie will turn out from the beginning and this also makes it easier for me to choose a cookie to make.
It has a picture of every single cookie which is important if you are not use to bake cookies, especially for the begginer baker as well. Definetely a must have for everyone who loves baking cookies.
- Reviewed in the United States on September 6, 2024There are so many recipes that I've baked and they are incredible. So happy 😊 😃 😀 I bought my first successful cookie cookbook.

5.0 out of 5 stars Einfach und gut.
OMG!

5.0 out of 5 stars Very good
I have tried one recipe of this book, but I have others of this series and are real good too. Not disappointed at all. The only thing it's that almost all the ingredients are in cups and spoons, great for beginners, but I prefer to weight the ingredients to get better results. It has a variety of recipes too.
