This loose paste contains lemongrass and also galengal, lime, onion, turmeric and jalapeno. (The loose texture is not a problem; it's just not a thick paste.)
One tablespoon of this roughly equates to one 4-inch length of lemongrass and is perfect for dishes such as beef rendang that call for both lemongrass and galengal (if, like me, you don't always have them fresh to hand).
