About the Author
Excerpt. © Reprinted by permission. All rights reserved.
I come from a family of nine—and a big family means big meals. In an effort to control some of our mealtime chaos and get dinner on the table before ten p.m., when I was thirteen years old, I began to help my dad with the cooking. Within a few months, I was cooking dinner for the entire family every single night—I loved it immediately. I have always been a creative person, so I started expressing my artistic side through cooking. I had fun dreaming up my own recipes, experimenting with new types of cuisines and ingredients, and putting my own twist on classics. At nineteen, I decided to capture the process in photographs and began to document my favorite recipes on Half Baked Harvest. I had no idea what I was doing at the time, but fast-forward several years and Half Baked Harvest has become a full-time career that keeps me extremely busy. In fact, my mom, my dad, and one of my brothers work for the company!
When I first started out, I was young, still living in my parents’ house, and I had all the time in the world to spend in the kitchen creating elaborate recipes. But I’ve had to adapt to a much busier lifestyle. My life now encompasses so much more than recipe development and photography. There’s travel, management of my team, and the demands of trying to grow the business. Like most everyone else in the world, I need simple, quick, everyday recipes that come together in a flash but still taste delicious. As my own cooking began to veer more into the territory of simplicity, I began sharing them and—surprise, surprise—they quickly became pretty darn popular.
I’m willing to bet you’re just as busy as I am, if not more so. The first thing to go when life gets hectic is meal planning and cooking, right? You get home at the end of the day, you didn’t plan ahead, you don’t have what you need, and you’re too tired to think. Well, I’m going to help you with all of that. In fact, this idea was born solely from the feedback I received from you guys. Your emails, Instagram messages, and comments on Half Baked Harvest said it loud and clear: more recipes that are delicious but EASY, too. This book is exactly that: my go-to super simple recipes. My purpose in creating Half Baked Harvest has always been to help readers get into the kitchen and create tasty, healthy(ish) recipes any day of the week. This cookbook is another tool for you to do just that.
ABOUT THIS BOOK
Here's what you need to know. Within this cookbook I’m sharing some of my favorite recipes. They are flavorful, colorful, and easy. Some of them are healthy . . . and some have a good amount of cheese. It’s all about balance.
Just because these recipes are super simple does not mean they lack flavor. While these recipes are straightforward enough for everyday cooking, they do not fall exclusively into the ten-ingredients-or-fewer and made-in-under-thirty-minutes categories—though there are plenty of both! Flavor has always been and will always be paramount to me. Of course, I want to share the easiest version of a recipe, but I will not sacrifice taste to make a dish with only five ingredients. That said, some of the recipes included here have more than ten ingredients and some take longer than thirty minutes, but that doesn’t mean the recipe is not “super simple.” If you can throw ingredients into a slow cooker, use an Instant Pot, dump them all in one skillet, or simply pick up a few items from the grocery store to assemble something quick, you can handle these recipes. You’ll definitely be adding these recipes to your weeknight lineup.
You can, of course, still expect all my special “Tieghan touches,” which can range from including an unexpected ingredient or garnishing with herbs or edible flowers. I’m still me—I’m just shorter on time! The extra flourishes not working for you? Skip ’em! Really, you have my permission. Making recipes beautiful and pleasing to the eye is what I’m all about—it’s a priority for me—but, please, take or leave these “extras” as you wish! (I will say, though, if you are looking to up your Instagram game, an edible flower or two is always a good start.)
I’ve organized the book by types of meals and popular main ingredients: breakfast, appetizers and sides, salad and soup, pizza and pasta, vegetarian, poultry and pork, meat, seafood, and last (but certainly not least, not here!) dessert. So, all your basic and most loved food groups, right? I have also included a chapter on my favorite super simple basic recipes because homemade still tastes better—and making meals from scratch doesn’t have to be difficult or a time suck. On these pages, you’ll find slow cooker dinners, Instant Pot recipes, one pan goodness, recipes made with exclusively pantry staple ingredients, recipes with fewer than ten ingredients (not including salt, pepper, or olive oil), recipes that take thirty minutes or less, and some of my best tips and tricks for easy cooking. Whenever possible, I have given slow cooker, pressure cooker, and stovetop options to make the recipes completely adaptable for your needs. Look for the icons at the right throughout the recipe pages.
There is something for everyone here . . . and a photo to go along with it, too.

About the author

As one of seven children, Tieghan Gerard grew up in Cleveland, Ohio before moving to the mountains of Colorado in her early teens. From a young age she dreamed of moving to LA and becoming a fashion stylist. But when Tieghan was fifteen, her only sister was born. Ever determined to rein in the chaos of her big family…and have dinner on the table before midnight…Tieghan began doing the cooking. She eventually discovered a new found freedom and a creativity she hadn’t known existed. She began chronicling her fresh takes on old favorites and coupling them with her styling skills – only this time on tables and cutting boards – on her blog Half Baked Harvest. Since then, millions of people have fallen in love with her unique recipes, stunning photography, and charming life in her barn, which she has made into her home, high up in the snow capped mountains.

- Reviewed in the United States on July 31, 2020The name of this cookbook speaks for itself: Super Simple. The book is my go-to when I do not have much time, but I still want to cook at home.
This cookbook is perfect for you & worth every penny if you are:
* new to cooking and looking for simple but yummy recepies
* looking for a cookbook to use on a weakly basis
* looking to feed a family but have a limited time
* experinced cooks who are interested in classic recepies with a fun twist
* in love with Half Baked Harvest blog
I have been following Tieghan on Instagram for about a year and she shares many recepies on her blog. When I was considering buying this book, I had some debates if it was worth it, since her blog is already filled with wonderful recepies. After many days of debating, reading reviews, and going back and forth, I finally decided to get the book.
What I truly love about this cookbook is that I can see myself making every single one of the dishes. There are many cookbooks you buy and you are only interested in maybe 10 recipes, the rest is just meh or way too complicated. However, it is not the case with the Half Baked Harvest cookbook.
There is a very good balance of the recepies. Every section has a variety of yummy creations that you should try making. The book is so versatile it would work for any season.
There was one thing that I have had some issues with is desserts. I am not sure if it is me, but every dessert that I made based on the cookbook, came out a bit off. When I was making a strawberry naked cake, my cake came out way too thick, and I had cream leftover, so I covered the entire cake with cream instead of leaving it open. The peach cobbler had way too much liquid. And banana bunt cake was a bit tough. I followed the recipe exactly and use proper measurements but it still does not come out exactly as on the picture. Don't get me wrong everything was still very delicious! My suggestion would be for more complicated recepies to have a section with what might go wrong and how to prevent it.
In conclusion, Half Baked Harvest Super Simple is a book that was made with love and care. Beautiful illustration, heart-filling stories, and wide variety of recepies will submerge you in a wonderful world of Tieghan Gerard.

- Reviewed in the United States on February 21, 2020I read a review that the buttery croissants were there grossest thing that they have ever made, but I completely disagree! It was absolutely delicious! I actually chose to buy my croissants at Starbucks for this recipe, because they have the best croissants in my opinion. The croissants at grocery stores tend to lack a lot of flavor by itself.. So, I think the key to this is to have good croissants to begin with and high quality cheese. Not every croissants taste the same. The same goes for cheeses even if they are both the same type of cheese. The different brands and companies do taste different..
That being said- I LOVE THIS BOOK! It is simple, but a little on the tedious side. There is just a lot of ingredients and prepping. But that is why the recipes taste GREAT with a lot of flavor.
Other recipes I have tried:
1. Frico & Polenta fried eggs: were good, but not excellent. And, I used DeLallo quick cooking polenta. It says it’ll feed 1, but I think it feeds 2. Or, it can be like a side dish to some bacons or something else.. It’s just too much for an entree, because you get sick of it fast.
2. Pressure cooker mash potatoes: excellent. Very flavorful! Different!
3. Gingered Apple pork chops: excellent! I didn’t have Apple cider on hand so I used 3/4c Apple juice instead. I also used green grapes instead of red!
4. Rosemary peach bruschetta chicken: excellent!
5. Coconut chicken tikka masala: excellent only, because I add my touches to it, and that is 2 hand fulls of basils (chopped), and about 2-3 tbsp of honey. Taste like Indian food! Loved it!
6. Sheet pan Cuban steak: excellent!
7. Beef bourguignon: good. It really does pair well with the pressure cooker mash potatoes in this book.
8. The butter croissants as stated above: excellent!
9. Egg in hole with tomatoes and bacon: amazing! However, I used whatever I had on hand, which is homemade sourdough bread from Five Minutes A Day bread book, pesto from Jamie Oliver instead of her homemade recipe, and grape tomatoes (halves) instead of heirloom. It.. was.. delicious!
For me, this book was well written, and superb in execution and taste! One of the best cookbook out there.. I have to say though, she does love her bacon as a base ingredient for most recipes!

Love the recipes and photography. Would make a beautiful house warming gift. Only thing is that all measurements are imperial as author is US based, just adds time (& sometimes confusion) to convert.
